I'll start with the choice of making more choices. I might choose 2 infinitely: the first about to subject in matter, and the other to continue making choices.

I choose an infinite amount/ im not sure...

Since we are constantly making choices, both consciously and sub-consciously, most of the choices which actually define a number would force you to cease living after only a few moments. Should I take this next breath? Oh wait, I can't make that choice.

Infinite choices wouldn't bring immortality, since it wouldn't stop you from aging. Having infinite choices is essentially what we have already, the number of choices we can make is bound only by our lifespan.
